I like the front tie too.
As for finishing the serged seams, I use fray check. Since I'm going to press the seam anyway I don't worry about it getting hard.
One book I read when I got my serger made a really good point ........ A lot of time there is no reason to finish the end of the seam because you are going to serge or sew over it anyway.

I really like that apron...and I think the front ties are practical. Much easier to tie and undo from the front!
