Fried Green Tomatoes

There are several recipes for fried green tomatoes that I've tried, but this way is my favorite. I don't really measure for these, so I'll try to estimate amounts. ;)


4 large green tomatoes, sliced 1/4" thick
3/4 cup buttermilk
dash of hot sauce
3/4 cup cornmeal
3/4 cup all purpose flour
salt and pepper to taste (and cayenne if you like spicy foods)
vegetable oil for frying

Place sliced green tomatoes onto plate or baking sheet and sprinkle lightly with salt. Let sit for half an hour to draw out some of the water. Pat dry with paper towel.
In a bowl, mix dash of hot sauce with buttermilk. In separate bowl mix together cornmeal, flour, salt, and pepper, and cayenne if desired.
Heat 1/2" vegetable oil in skillet over medium to medium high heat. Dip each tomato slice in buttermilk mixture, then toss in cornmeal mixture until well coated. Fry in hot oil til golden brown, flip over and fry other side til browned. Drain on paper towels.

These are wonderful served with Chipotle Aioli Sauce:
1 cup mayonnaise
1 T chipotle peppers in adobo sauce (add 2 T if you like it HOT)
1 to 2 T lime juice
1 large clove garlic, minced
1tsp cumin
1/8 tsp salt
Place ingredients in blender and blend until smooth. Sauce is also great on sandwiches, chicken fingers, fries, crabcakes, etc. ;)

Stupid question; Are green tomatoes just unripe regular ones? In Mexican cooking there are tomatillos (for green salsas, etc.) but they're a totally different type of tomato that's green. I've never had Fried Green Tomatoes. I'd like to try. Thanks, Lori.

Stupid question; Are green tomatoes just unripe regular ones?

No stupid questions here! Yes green tomatoes are just unripe regular tomatoes. My Mom & Dad loved them!

Barb, Here I was thinking Fried Green Tomatoes was strictly a southern delicacy ! ! LOL I love them dearly..

I think they were started as a farm tradition when you had too many tomatoes that weren't ripe. I only like tomatoes in sauces.

I like to use green tomatoes that have barely blushed on one side. ;) If they are too close to being ripe, they get soggy.
You should try them Lennie. I could eat them every day. Especially with the aioli sauce. :P
We only get to have them in the summer time when tomatoes are in our garden. I'm wondering if I could fry up a ton of them and freeze them for winter. I've never tried it before. :think:

I'm planning to make green tomato pickles too.

and here was I thinking that green tomatoes are full of alkaloids and therefore poisonous - in the same way that green potatoes should not be eaten - they are all Solonacae after all. However, I make Green Tomato chutney - go figure!

There is a movie/book titled "Fried Green Tomatoes". The movie is cute and I havn't read the book. It is situated in the south and there is a scene where two women are trying to perfect their fried green tomatoes to sell, in their train station restaurant.
The author is Fannie Flagg from Birmingham, Alabama.
