There are several recipes for fried green tomatoes that I've tried, but this way is my favorite. I don't really measure for these, so I'll try to estimate amounts.
4 large green tomatoes, sliced 1/4" thick
3/4 cup buttermilk
dash of hot sauce
3/4 cup cornmeal
3/4 cup all purpose flour
salt and pepper to taste (and cayenne if you like spicy foods)
vegetable oil for frying
Place sliced green tomatoes onto plate or baking sheet and sprinkle lightly with salt. Let sit for half an hour to draw out some of the water. Pat dry with paper towel.
In a bowl, mix dash of hot sauce with buttermilk. In separate bowl mix together cornmeal, flour, salt, and pepper, and cayenne if desired.
Heat 1/2" vegetable oil in skillet over medium to medium high heat. Dip each tomato slice in buttermilk mixture, then toss in cornmeal mixture until well coated. Fry in hot oil til golden brown, flip over and fry other side til browned. Drain on paper towels.
These are wonderful served with Chipotle Aioli Sauce:
1 cup mayonnaise
1 T chipotle peppers in adobo sauce (add 2 T if you like it HOT)
1 to 2 T lime juice
1 large clove garlic, minced
1tsp cumin
1/8 tsp salt
Place ingredients in blender and blend until smooth. Sauce is also great on sandwiches, chicken fingers, fries, crabcakes, etc.
