I don't remember where I found this recipe but it is very easy and tasty and you can control the spice. I've used it on chicken, beef and pork and all have turned out tasty.
2 pounds boneless chicken thighs (or chuck roast, or pork loin)
1/2 to 3/4 cup of your favorite tomato based salsa
1-2 Tablespoons of chopped canned chipotle chilies in adobo (this you can add more or less according to your taste) I usually use one chili with some of the sauce and it is a nice mild flavor
1 Tablespoon chili powder
1 teaspoon salt
4 (or more) gloves of garlic minced.
Combine all the above. Coat your meat of choice and place In slow cooker.
Hi setting for about 4 hours and 8 hours low or until done.
I generally start out on high then turn to low just to get the meat hot quicker.
The original recipe called for chicken thighs and to shred them and serve as tacos. I put then in wraps with various toppings. The beef I went ahead and made a stew out of and the pork sliced and served with rice and veggie.
