any good veggie burger recipes?

New postby Bama on Mon Jun 02, 2008 9:04 pm

I love Boca burgers and wanted to try some recipes for homemade veggie or bean burgers. I tried this one for lunch today: http://allrecipes.com/Recipe/Homemade-B ... etail.aspx
They tasted pretty good, but I had to add more bread crumbs to get them to stick together. I would have preferred not to add more bread to them. DD and I ate one each and I froze 6. Another good thing besides them being healthier than hamburger meat is it's really cheap to make them! I just wish DH would give stuff like this a chance. He would be healthier and my grocery bill would come down. ;)
Anyone have a tried and true recipe for veggie burgers? Kaitlin? Do I remember correctly that you're a vegetarian?

Yep, I'm a vegetarian, but I haven't ventured much into homemade veggie burgers. We eat veggie burgers when we're lazy/rushed, but premade ones (Boca, Morningstar Farms, Gardenburger). I have a few recipes I should try, though. I tried making them once without a recipe - that was pretty disastrous. ;) I think we did have some "Asian" flavored veggie burgers from a recipe - they held together well, but they were pretty bland. I can't remember if they had breadcrumbs in them - I think they probably did. Seems like there should be something else you could put in there that would be a little more healthy/filling. Maybe some portion of the beans pureed in a blender or food processor would help them stick together more? Or more egg? Anyway, I've been wanting to try some new recipes, so I'll let you know if I come across anything good! :)

Bama, did you read the reviews? Some of them had good suggestions for holding the patties together, such as substituting oats for the breadcrumbs and straining the water from the vegi ingredients. I also thought about tofu, but I haven't used it so I don't know how it behaves.

Thanks ladies. I'll try oats next time in stead of breadcrumbs. I read the reviews but still went with breadcrumbs the first try.
Lennie, I saw several recipes there that look worth a try. Thanks. I might try chick peas in the burgers next time.
Never tried tofu. I bought some planning to marinate it and bake it. Maybe tomorrow.

I eat alot of soyburgers... 30 seconds in the microwave - break up into little pieces - they are great in seasoned stir frys, scrambled eggs... salads... i use them alot! never thought about making my own. Thanks for the info.
