Southwestern Egg Bake

This recipe was brought to our American Sewing Guild meeting and when we all tasted it we told the lady she had to give us the recipe. It's good. Great for Brunch. ENJOY

Southwestern Egg Bake
> Prep Time: 20 minutes (Ready in 1 hour 35 minutes)

3/4 lb. bulk spicy pork sausage
1/2 cup chopped onion
1/2cup chopped green bell pepper
4 cups refrigerated or frozen hash-brown potatoes, thawed
6 oz. [1 1/2cups] shredded Cheddar cheese
4 eggs
3/4 cup of milk
3/4 cup Old El Paso Salsa

Heat oven to 350 F. Grease 8-INCH SQUARE (2 QUART) baking dish. In medium skillet, brown sausage with onion and bell pepper. Drain. Arrange potatoes in bottom of greased baking dish. Top with half of the cheese, all of the sausauge mixture and the remaining cheese. In small bowl, beat eggs slightly. Beat in milk. Pour over mixture in dish. Cover with foil. Bake for 1 hour. Uncover baking dish; bake an additional 10 to 15 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving. Serve topped with salsa. 6 servings

MMmmmmmm, comfort food. Sounds delicious............ but soooo bad.

It was sooooo good. I had it at my ASG meeting last Saturday I just had to share it with all of you. Yummy comfort food is right. Makes a good tasty dish for Brunch

The way my nerves have been lately my desk is not exempt from me taking a bite out of lately. I just keep eating and don't care anymore. the last few months I've been eating and eating and can't seem to stop. I'm working and the temptation of the food that comes in the shop is just too much and then when I get home I cook supper and eat and eat until it's bed time. If I go to bed early I just get up early and eat so what's the use. When my pants gets tight in this size then I'm going to padlock the fridge and say no more. At the rate I'm going I'll not make it to Thanksgiving before that happens. :anxious: :anxious: :anxious: :pray: :pray:
