Now that soup weather is upon us....

I've been making this soup for 30 years. No idea where the recipe came from but I'm guessing the newspaper. Used to have a great food section back then. I know it's called a chowder but not being from chowder country don't blame me if it's not a real chowda. I didn't name it but it's so good. Had leftovers tonight.

WINTER VEGETABLE CHOWDER

2 cups chopped onion
1 cup sliced celery
4 tbsp butter
2 large peeled potatoes, cubed (I use a bit more.)
2 cups peeled and sliced carrots
4 cups water (I use chicken stock or vegetable stock)
2 chicken bouillon cubes (or vegetable)
2 tsp salt
1 tsp basil leaves
1/4 tsp black pepper
1 14 oz can corn, undrained
2 tbsp flour
12 oz evaporated milk (I just used half and half with the flour)
1 cup shredded cheddar cheese, optional (delicious with or w/out - but adds LOTS of calories!)

Saute onion and celery in butter. Add potatoes, carrots, water, bouillon, salt, basil and pepper. Heat to boiling. Reduce heat. Cover and simmer 30 minutes. Stir in corn with liquid. Boil gently another 30 minutes. Combine flour and milk and add to veggies.Cook and stir until it just comes to a boil. Remove from heat and stir in cheese.

Lennie that sounds delicious. We eat a lot of soup here in the winter and needed something different. Thanks for sharing.

Looking forward to that one - your Minestrone recipe has become know as Mum's frankly Magnificient Minestrone and I still eat it regularly!
