Looking for Good Homemade Soup Recipe

I love homemade soup ...I'm not a great soup maker ...was wandering if anyone has a good recipe for chicken soup ...or Barley soup.

I make good pea soup...I just follow the package LOL. :D

Ya mean with measurements???? I can tell you how I make mine, but I don't measure anything!

Most of the soups I make are hit or miss. I don't measure either.

No measuring here either.
But for chicken I throw the chicken in the crock pot with a little water, onions, garlic and whatever dried green spices (I like thyme and of course a bay leaf) and cook the meat off the bone. Get rid of the bones and put the stock and chicken in a pot on the stove. Bring it to a boil and add vegetables.
I use whatever I have around. More onion (of course) a couple carrots, green beans, potatoes. You can dump in frozen or fresh peas, corn. Maybe a can of beans if you like.
If you like pasta or rice toss 'em in and add some water if you need to.
The best way to ruin a soup is to worry to much about measuring stuff.
And, while I may not be a super cook I am a soup goddess.

I'm not much for measurements either but I'll give it a try

half of a large butternut pumpkin cubed (I think it's about 3 cups - maybe a bit more)
half a cauliflower (about 2 cups or so)
2 medium to large onions (or a leek if you prefer)

Cut them all up and put them in a saucepan. Measure out enough chicken stock to cover them - I just put in the water and then when I know how much I've used I add stock powder afterwards. Add some curry powder - half a teaspoon if you're timid or 1 to 1 1/2 if you're not and a good shake of paprika or black peppercorn.

Cook it till it's mushy and drain (but keep) some of the water aside. I keep it in the saucepan and use my stab blender to puree it while it's still in there but you could take it out and put it into the blender. If it's just right as far as thickness goes then throw out the liquid you've kept but if you like it thinner then pop a little back in. You might need to reheat it if you've removed it from the saucepan or taken too long.

Serve with some sour cream on top.

Okay That sound's good to me...both of those soups...my Hubby and I both love homemade soup...He tries to make soup and it is pretty good ...but Chicken soup is so thick...as he put a lot of Barley in it...I could stand a spoon it ...I don't want to hurt his feeling's...but I would Like broth in it to LOL... I can't complain ..at least he tries...I will have to learn ...so thanks lady's...I will try them.

For what its worth... a gourmet cook once told me that for chicken stock... adding a stalk of celery cut up with the onions was essential. I don't often have it.. but always add it if I do.
