Chili Sauce

Well since I was being overrun with ripe tomatoes...I decided to make chili sauce last night. It turned out great (again) so thought I'd share the recipe in case anyone is interested. I sometimes use it as a mild salsa, although it is definitely sweeter than what you purchase LOL.

Chili Sauce

#1
18 medium tomatoes
4 onions
2 red peppers
2 green peppers
2 sticks celery
1 tsp. cayenne pepper
4 cups white sugar
¾ cup pickling spice tied in cheesecloth

#2
2 cups white vinegar
5 tablespoons corn starch
1 tablespoon pickling salt

Skin tomatoes squeezing some juice and seeds out.
Cut other ingredients small.
Mix all ingredients under #1 and boil for 2 hours.
Mix ingredients under #2 together and add to first mixture. Boil another 5 minutes.
Pour in jars and seal. Makes approximately 5-6 500 ml jars.

It's only 9:45 in the morning but you made my mouth pucker! Sounds delicious.

We are both from Quebec (well I was) and where I grew up, we called it home-made ketchup. It it soooo yummy. Love it with sheppard's pie and also meat pie. I made a batch earlier this summer and I'd better make sure I have enough left to give to my brother. If he ever found out I made some and didn't give him any, he'd make me pay for the next 10 years ... he would.

Sunshine...my mother used to make home-made ketchup. It was to die for but I never got her recipe. This one is from a friend and it is thicker than the ketchup. But I like it ...and I usually give a couple of jars to my brother too. His wife never makes anything like that and he love them.

5 tbsp of corn starch will do that :D

The corn starch and kind of vinegar in this chili are basically the only difference with the recipe for ketchup I've picked up in a magazine. The ketchup also calls for red onions.

Doesn't the house smell soooooooooo good when you make these goodies
