Hawaiian Chicken Salad

Hawaiian Chicken Salad

1/4 cup Hellman's Dijonnaise
1/4 cup apricot preserves
1 Tablespoon soy sauce
2 cups (10 ounces) diced cooked chicken
1/4 cup sliced green onions
1/4 cup slivered almonds, toasted
1 can crushed pineapple in natural juice


Drain juice from pineapple and set aside for other uses. Combine wet ingredients, then stir in remaining ingredients.
Great served with sweet Hawaiian rolls. I'm pretty sure I got this recipe from a magazine ad for Hellman's year's ago.

I don't know how I missed this one. :eh: I think I'll try it with lite mayo + a spoon of Dijon mustard.

I made some. :P Hubby made beer can chickens on the grill today and while I was putting everything away, I chopped up one of the left over chickens and made this chicken salad. I wasn't sure how the grilled chicken would be in it (with a smoky flavor), but it's delicious. It will be lunch for tomorrow.
