Recipe calls for Only 1 pkg dry yeast (rapid rise/Highly Active). I use another half packet. Follow instructions on pkg. to activate and test yeast in a large bowl. This does call for a 1/2 teaspoon of sugar. The yeast eats this, so it doesn't count. Use 1 1/8 cup baby bottle warm water to dissolve the yeast. Let is rise till you cannot see liquid in the bottom of the bowl, I use a clear glass bowl.
Pre-heat oven to 325.
Mix the dry ingredients together and set aside.
1 1/2 teaspoons baking powder
1teaspoon salt
1 Tablespoon Splenda
1 cup Wheat Gluten Four
1/4 cup Oat Flour
3/4 Cup Soy Flour
1/4 Cup flax seed meal
1/4 cup coarse unprocessed wheat bran
Optional ( Vanilla protein powder) 1/2 cup
2 eggs well beaten
1/2 cup heavy whipping cream
3 tablespoons olive oil.
Spray your hands with Pam to keep the dough from sticking.
Kneed the dough lightly. The gluten will get very sticky and fall apart.
Cover and let rise, the dough should rise to double its size. about 45 min.
Kneed lightly again and place in pans.
Bake for about 45 min. Check frequently with a tooth pick. Let cool in pan.
Try different grains to make 4 cups of dry ingredients.
Hope you like it. It is still a very heavy bread not at all like white bread.
Note: if the dough seems to dry add a little warm water.
